Which sweetener, and does it matter?
Sweetness, calories, blood sugar, aftertaste, and how each one actually behaves when you cook with it. Including the ones this site would not reach for, and why.

The thing worth saying before the table
Swapping sugar for a sweetener is a useful move. It is not the goal.
The goal is needing less sweetness at all, and that is a genuinely achievable thing rather than a motivational line. After about three months of eating less sugar, people rate the same concentration of it as roughly 40 percent sweeter than they did before. The food did not change. The calibration did.
That is why the honest answer to "which sweetener" is usually "the one that gets you to a smaller amount of sweetness overall." A sweetener you use by the cupful to keep everything as sweet as it was is solving the blood sugar problem while leaving the craving problem exactly where it was.
The World Health Organization advised in 2023 against relying on non-sugar sweeteners for weight control, for roughly this reason: the long-term benefit people expect does not reliably show up.

Allulose

What it has going for it. Tastes and behaves the closest to real sugar of anything on this page. It browns and caramelizes, which almost nothing else here does, so it actually works in baking. No cooling aftertaste, and gentler on digestion than the sugar alcohols for most people.
What to watch. Large amounts can still cause bloating or loose stools, so work up rather than starting with a cup of it. It is the newest of these, which means the long-term human data is thinner than for stevia or sucralose. Availability differs by country, so check what is sold where you are.
Monk fruit
Solid everyday choiceNon-nutritive · 150 to 250 times sugar · Zero calories per gram
What it has going for it. Clean sweetness with less of the aftertaste problem that stevia has for a lot of people. Heat stable, so it holds up in cooking.
What to watch. Almost every monk fruit product on the shelf is mostly erythritol with a little monk fruit extract in it, because pure extract is intensely sweet and hard to measure. If you are avoiding erythritol, read the ingredient list rather than the front of the bag.
Stevia

What it has going for it. Plant derived, zero calories, no blood sugar effect, and the most studied of the plant-based options. Widely available everywhere.
What to watch. A bitter or licorice-like aftertaste that some people taste strongly and others do not notice at all. Which one you are is worth finding out with a small package. Packet versions are often bulked with dextrose or maltodextrin.
Erythritol

What it has going for it. For years this was the default recommendation: nearly zero calories, no blood sugar effect, and better digestive tolerance than the other sugar alcohols.
What to watch. A distinct cooling sensation on the tongue that is hard to unnotice once you have noticed it. More importantly, a 2023 study in Nature Medicine linked higher blood erythritol to cardiovascular events, with a proposed mechanism of increased clot formation. That is an association rather than proof, and it does not make erythritol dangerous on the evidence available, but the picture is less settled than it looked a few years ago.
Xylitol

What it has going for it. One-to-one sweetness makes it easy to substitute, and it has genuine dental benefits, which is why it turns up in gum and toothpaste.
What to watch. Severely toxic to dogs, even in small amounts, which alone is reason to be careful if you have one. It carries real calories and a small blood sugar effect, unlike most of this list. And a 2024 study in the European Heart Journal found the same cardiovascular association reported for erythritol.
Sucralose

What it has going for it. No aftertaste for most people and it holds up reasonably in cooking, which is why it is the most widely used of the older artificial sweeteners.
What to watch. The packet form is mostly dextrose or maltodextrin as a bulking agent, so a packet is not calorie-free or carb-free even though the label rounds to zero. Some evidence suggests high-heat baking may degrade it, so it suits drinks and no-bake uses better.
Aspartame
Fine, with caveatsNon-nutritive · About 200 times sugar · Effectively zero calories per gram
What it has going for it. Decades of use and a large body of research behind it. No aftertaste for most people.
What to watch. Breaks down under heat, so it is not usable for baking. Unsafe for anyone with phenylketonuria, which is why the warning appears on the label. In 2023 the IARC classified it as possibly carcinogenic to humans (Group 2B) while the joint FAO/WHO expert committee reviewed the same evidence and left the acceptable daily intake unchanged. Those two things are less contradictory than they sound: the classification describes strength of evidence, not size of risk.
Acesulfame potassium

What it has going for it. Heat stable and cheap, which is why it appears in so many products.
What to watch. A slightly bitter edge, which is why it is nearly always blended with sucralose or aspartame rather than used alone. Listed as acesulfame-K or ace-K.
Saccharin

What it has going for it. The oldest one, in use for over a century, and inexpensive.
What to watch. A metallic aftertaste most people notice. The 1970s bladder cancer scare came from rat studies through a mechanism that does not apply to humans, and the warning label was withdrawn in 2000. It is a taste problem now, not a safety one.
Maltitol
Easy to regretSugar alcohol · 75 to 90% of sugar · About 2.1 per gram calories per gram
What it has going for it. Behaves a lot like sugar in candy and chocolate, which is why manufacturers like it for sugar-free products.
What to watch. The one most likely to catch you out. It raises blood sugar substantially more than people expect from something on a sugar-free label, and it is a well-known cause of digestive distress. If a sugar-free chocolate bar disagrees with you, this is usually why.
Sorbitol

What it has going for it. Cheap, and it holds moisture well, which is why it is common in sugar-free gum and mints.
What to watch. The most reliably laxative of the sugar alcohols. Fine in a stick of gum, unpleasant in quantity.
Honey, maple, coconut sugar

What it has going for it. Real flavor that refined sugar does not have, and trace minerals. If you want a spoonful of honey in something, have a spoonful of honey.
What to watch. These are sugar. They are on this page only because they are so often presented as alternatives to it. The glycemic differences are real but small, and none of them deliver what people are usually hoping for, which is fewer cravings. See every name for sugar for the full picture.
Choosing by what you're actually doing
For baking, allulose, because it browns and caramelizes the way sugar does. Almost nothing else here will. Monk fruit and stevia are heat stable but contribute no bulk or browning, so they work better in things that do not need structure. Aspartame breaks down under heat entirely.
In coffee and tea, whatever you like the taste of, and the aftertaste question decides it. Stevia divides people sharply, so buy the smallest package before committing. This is also the easiest place to practise using slightly less each week.
For managing blood sugar, allulose, monk fruit, or stevia. Avoid maltitol specifically, which raises blood sugar substantially while sitting on a sugar-free label.
With a sensitive gut, stevia or monk fruit, neither of which ferments in the gut. Sugar alcohols are the usual culprits, sorbitol and maltitol especially.
If you have a dog, no xylitol in the house. It is severely toxic to dogs in small amounts, and the gum in a handbag is the classic way it happens.
